Hungry Girl Crazy-Delicious Seafood Corn Chowder

From Hungry Girl's 1-2-3 cookbook, with a few tweaks:
I used 12 oz of orange roughy; the recipe calls for a 6 oz fillet of mild white fish (such as tilapia or cod)
I used 1/2 cup skim milk; recipe calls for 1/2 cup plain light soymilk

Easy Turkey Sloppy Joes (gumbo)

My momma always used a can of gumbo to make her sloppy joes, and I can't seem to find a good turkey sloppy joe recipe using gumbo, so this is my take on "healthy" sloppy joes.

Veggie "pancake"

A breakfast suggestion I took from a magazine. Suggested to be served with 100 cal worth of apple chicken sausage and half a grapefruit for a 400 calorie breakfast. A good way to get an egg (white) in along with veggies at breakfast time.

Black Bean Salsa
