This curry is creamy, tangy, sweet, spicy and absolutely delicious. Itís also a quick and easy recipe that canít go wrong. It's versatile, and goes equally well mixed with rice or with Indian breads such as chapattis and rotis.
This is a very vegy-loaded fried rice.
This is my hubby's favorite. Sometimes we shake it up a bit by using this chipotle fetticcine we get from the farmer's market - gives it a little kick!

From Hungry Girl's 1-2-3 cookbook, with a few tweaks:
I used 12 oz of orange roughy; the recipe calls for a 6 oz fillet of mild white fish (such as tilapia or cod)
I used 1/2 cup skim milk; recipe calls for 1/2 cup plain light soymilk
My momma always used a can of gumbo to make her sloppy joes, and I can't seem to find a good turkey sloppy joe recipe using gumbo, so this is my take on "healthy" sloppy joes.
A breakfast suggestion I took from a magazine. Suggested to be served with 100 cal worth of apple chicken sausage and half a grapefruit for a 400 calorie breakfast. A good way to get an egg (white) in along with veggies at breakfast time.

This is a great chunky veggie salsa. It's always a huge hit at parties, and I know I just can't stop eating it when I have it at home!
