My all time favourite! I use a full tablespoon of chili powder and double the jalapanos. I also adore cilantro, so will add up to 1 Cup chopped! Comforting, flavourful and filling. I especially like the number of ingredients that you can keep on hand and don't have to get fresh before cooking.
This recipe is from "The Whole Foods Market Cookbook", but I've reduced the calorie count significantly.
This is very easy to make, but with huge taste! Fresh ingredients make this special. It's great when tomatoes are plentiful. It can be easily doubled, and can be frozen in single servings, with no loss of flavour.
