Adding celery, fennel, and ginger to the soup makes it especially good for the tummy and gut.
So easy and what my Mom used to fix. I tweaked it a bit to make it healthier and serve the veggies on the side so the kids wouldn't freak out.
I do this when I want a Sunday dinner but don't want to spend hours in the kitchen. Throw together a salad and whatever other sides you have on hand and its a hearty meal that is pretty cheap and waistline friendly. A hint, if you don't want to transfer it to the oven you can leave it in the pot and thicken the stock .
