It's not a truly low fat soup. It is very tasty and very filling. Plus my kids will eat it.
Adding celery, fennel, and ginger to the soup makes it especially good for the tummy and gut.
So easy and what my Mom used to fix. I tweaked it a bit to make it healthier and serve the veggies on the side so the kids wouldn't freak out.
I do this when I want a Sunday dinner but don't want to spend hours in the kitchen. Throw together a salad and whatever other sides you have on hand and its a hearty meal that is pretty cheap and waistline friendly. A hint, if you don't want to transfer it to the oven you can leave it in the pot and thicken the stock .
Just a turkey chilli that I throw together and serve with corn bread.
