Loaded Shrimp & Potato Chowder

This is so healthy and yet, sooo good!!! My 11-year-old always begs for more and my husband always complains that I never make enough. It has become a staple in my family. Some have made similar recipes but with the right ingredients, I have managed to reduce the calories by almost have, which is a big plus for dieters like us.

Squash or sweet potato Pie

This delectable treat is easy to make for when you just want to kill your cravings and goes well to substitute as sweet potato pie as well. Sugar can be substituted with splenda and reduce your calories even more.

Enchilado de camarones y langosta (shrimp and lobster jambalaya

This is like a jambalaya, only seafood and it's delectable. It goes great with white rice and if you have any leftover (which tastes better the next day), you can enjoy it with some cuban bread. Believe me, the sauce tastes to good to throw away!

Great Northern Bean Stew

These are by far my favorite of favorite bean stews. Not only does it taste great, it is also packed with vitamins and nutrients to boot. It is healthy and filling and quite easy to make if you have the right equipment. If you don't have a pressure cooker on hand, follow the product company's suggestions to assure their tenderness and use a pot if that's all you have on hand. I guarantee you will not regret making them.

Cuban-style pork roast (puerco asado)

I wish I could take credit for this but after many searches, I finally found this recipe to be the closest to the roast I know and enjoy. This for cuban people is a delicacy. Served with congri or black beans and rice and you have a complete meal.

flaxseed milkshake

This shake is said to do wonders in lowering your cholesterol, of which I have a problem. It was handed down to me by my mother-in-law, whom also has this problem. After taking it continuously, her lab results were that her cholesterol had gone down. I don't know if that was as a result of taking it or the medication, maybe both, I don't know. Either way, it is very delicious, and as you can see, nutritious.

Bistec en Cazuela (steak in a pot)

This is among my many spanish favorites for its' flavor, simplicity, and minimal ingredients. If you have a pressure cooker handy, it'll cook in less than 20 minutes, give or take depending on desired consistency. It goes perfectly with rice or simply vegetables, if you choose. Either way, it will be one of your favorites also.
