Salsa Smothered Shredded Chicken

This slow cooked chicken is great for tacos or served on own! I served it in a flour tortillas topped with shredded cheddar cheese and fresh guacamole for my husband, and for myself I served it over quinoa and topped it with the guacamole (pictured). Super filling and satisfying.
