Sweet Potato Ravioli, raw - cashew filling

Taken from Summer Sanders, Raw and Radiant. I used fresh rosemary (rather than sage) and cilantro (rather than parsley). Sliced sweet potato with cashew filling and an olive oil based sauce. I use organic veggies when available and other products with whole ingredients and no added sugar.

Soup - Avocado, red pepper, tomato - RAW

This raw soup turned out really good and should keep us full.

Salad: Kale, Chard, Carrot plus

Dark green leafy raw salad base. Add other veggies as desired or available. Use a salad dressing of your choice. Raw sesame dressing is a favorite.

Salad: Arugula and Beet

Arugula and beet salad with white balsamic vinaigrette. Fresh and raw.

Farro Salad with Tomatoes, Celery & Herbs

A filling, low calorie, protein rich salad made with the ancient whole grain named Farro.

Tacos - Veggie Style

I created this recipe tonight because I really enjoy the veggie tacos at Islands. These were really good! I enjoyed the pepper jack cheese but could do without to save calories.

Trader Joe's makes redi-made shells that have the same calorie value as soft shells.

Meatless Chik'n Vegetable Soup

I created this soup dish tonight and both my husband and I really liked it. I may play with the spices a little more and may try a healthier pasta. This is a hearty soup.
