High in fiber and protein with just 225 calories.
Makes a good topping for a baked potato or rice. Also quite good mixed with cauliflower or even served alone as a side dish.
I couldn't find a squash casserole recipe I really liked, so this is a combination of the two that were the closest to what I was looking for. The taste is pretty mild as per my picky 11-year old, but you could easily jazz it up with herbs, spices or the addition of other veggies.
This recipe is very basic and open to adaptation. If you don't like the veggies or seasonings, it's easy to change it up to suit your taste.
