Yummy, a big hit at parties
This is the nutritional information for just the filling for the Tex Mex Calzones. I find that the recipe makes more than the 4 calzones that the recipe says, I use 1/2 cup per calzone and that seems to be lots. I use the extra in a wrap with some tomato, sour cream... whatever. This is just for the filling.

This uses mini red potatoes, if you use mini white potatoes the cooking time would likely be cut in half.
I really like dark meat chicken (and it's cheaper) so I put together a recipe for chicken parmesan using dark meat
Makes 6 cups in total. According to the comments on the web site where I found the recipe (Allrecipes.com) it is good hot or cold. I plan on eating it for lunch so one cup is ok, could also be used as a side dish or as a salad... pretty versatile. I think the next time I make it I will only use one can of black beans....
Simple dessert recipe... cake is kind of cumbly but good. This can be done with any combination of cake mix and diet pop that sounds good... Chocolate cake and Diet Coke is good.

A bit of everything tossed together and stir fried... yummy!
This was so good nobody at the party I took it to would have know it was a lower fat, lower calorie option if I didn't tell them... and it is so easy to make!
This is a zesty dip and paired with baked tortilla chips or baked crackers it is tasty...
