Japanese Noodle Soup

Yummy, quick and easy asian syle noodle soup. Serve over already cooked rice or ramen noodles.

Cheesy Bisquick Egg Souffle

I created this recipe after my daughter's wisdom teeth surgery so she could have something soft and savory, with some protein. It turned out delicious, with the consistency of Stouffer's spinach souffle. If chewing is not a concern (;-), I would add sauteed veggies to the recipe.

Asian Quinoa Pilaf

Diced greens, carrots, peppers and tofu in a light garlic-teriyaki sauce served with quinoa. This was a delicious and healthy experiment to use up some veggies.

Ground Beef & Mixed Veggies

Serve over egg noodles or shaped pasta for a homey comfort food kind of meal.

Curried Cauliflower, Potatoes & Chick Peas

Yummy comforting vegan curry. Adjust the heat to your liking with cayenne or hot sauce. Use diced onion instead of or in addition to celery for more authentic Indian flavor.
Nutritional information is based on 1 cup serving. Serve with brown rice or nan/chapati. This is a fairly mild curry -- increase the quantities of herbs for a stronger or hotter flavor.
