This is our modified version of a SP recipe we found that had been reprinted with permission by Seattle County Public Health. It's VERY quick to throw together, and a very 'clean' recipe, plus they're DELICIOUS! :)

Winter Minestrone

Recipe from Giada de Laurentis, with some modifications based on what I had on hand and what ingredients I could actually get my hands on in this sprawling metropolis of Deming, NM. (Having since gone vegetarian, I omitted the original pancetta/bacon).

Alton Brown's vanilla wafers

This recipe is from the "Good Eats" episode about Banana Pudding. *Alton used a tsp. dough scooper and made 70 cookies. I could only find a TB scooper, and got 28 cookies.*

Italian Baked Chicken & Millet

This is just one of many variations we've done on Giada De Laurentis' dish made w/ pastina. We used millet this time.

Smoky Turkey Shepherd's Pie (RR)

This is slightly modified from a Rachael Ray recipe. The potatoes on top are amazing tasting!!!

Mushroom Barley Pilaf

This is from Alex Jamieson's book, "The Great American Detox Diet". The original called for vegetable stock, as she's a vegetarian. We prefer to use chicken broth for flavor.

(BTW, an interesting fact: If you are not familiar with her, Alex is now the wife of Morgan Spurlock, the documentarian who did the movie "Super Size Me". She watched in horror as her then-boyfriend's health deteriorated alarmingly during the 30 days during which he ate only McDonald's. As soon as the filming was done, Alex treated Morgan with the "detox diet" in her book to return him to health. However, it's not really a diet that's being advocated in her book - it's more of an "antidiet", a return to eating whole, healthful foods.)

Low-Fat Banana Bread

This recipe is my slightly-modified version from Nick Malgieri's cookbook, "How to Bake". It is simple & delicious!

Asparagus Barley Risotto

This recipe is - surprisingly - from a free CostCo cookbook. My husband made a few tweaks (he halved almost eveything, left out the wine, etc) and it was terrific. Here are the directions and ingredients for how he made it. :-)

Anthony's CHILI

This is my husband's own chili recipe - I just made it myself for the first time tonight! Yummy!

Lean, Mean Meatloaf

This is slightly modified from a recipe provided in the Everyday with Rachael Ray magazine. They have replaced the traditional ketchup topping with red pepper puree, and used oats instead of breadcrumbs for a binder. This one's a hit in our family, even with the kids.

Blueberry Muffins (Nick Malgieri)

This recipe is from the book, "How to Bake" by Nick Malgieri. These muffins are absolutely fantastic, although definitely not a "diet" food. They are still good cool or reheated, but they are truly HEAVENLY when served straight from the oven.

Quaker chicken barley chili

This is from the back of the Quaker Medium Barley box. I haven't made it yet, but it sounds good, so that's what is for dinner tonight! When I entered the ingredients I'd be using, the nutrition data came up slightly different that what the box suggests the recipe will be. I'll be using reduced sodium versions of the tomatoes, broth, and corn.

Dave Lieberman's Black Bean Soup (modified)

This is a great, thick & hearty soup. I prefer to use an immersion blender once it's done cooking to blend for a more even consistency. We've omitted the bacon from the original as we're now vegetarian.

Giada De Laurentiis' Beef w/ Barley Soup

This soup was originally supposed to be with lentils, but since I don't like them, my lovely husband was nice enough to substitute barley instead. It makes ALOT and it's very hearty.
