You can reduce the calories and carbs in this dish by substituting tomato sauce for the ketchup, eliminating the brown sugar, and sweetening it with your favorite calori-free sweetener. You can also add grated zucchini or as much diced mushroom as you can handle, to stretch the recipe.
Lots of vegetables here. Low-fat vegetarian comfort food if ever there was! If desired, you can subsitute reconstituted textured vegetable protein (TVP) for the Boca product.
Prep the vegetables ahead of time if desired for a quick weeknight dinner.
