easy crockpot dish
I got this recipe from HelloFresh, it was surpisingly amazing. I added the turkey, so this could be a vegetarian dish if you like. I paired with a salad... good deal and will make again.
I love chicken thighs, I tried to convert to chicken breast and just can't do it unless it's chopped up in a salad.
Low Carb by using Cauliflower rice. Nice and simple....
This recipe originally had beef short ribs but it was so high in calories, sodium and fat I switch to just a beef chuck and came out delish without all the riff raft....

My new favorite new thing making calzones and pizzas out of tortillas. Making these are an easy way to keep myself on the right track. After making them before placing them in the oven I just spray them down with cooking spray and place them in the freezer. Bring them out and bake them for 30 minutes.... awesome
I've been experimenting with tortillas using them for mini pizzas, I thought I could use them for Calzones. I find a recipe using tortillas, so I just came up with something that ended pretty awesome.
Just something I thought of off the top of my head. I didn't want a regular turkey burger and I'm always putting tomatoes on top of something... turned out pretty good. I'm always worried about my sodium intake and sometimes I suffer taste because of it, but not this time.... I came out on top!
I have been looking for something different and pretty easy, but also tasty. I've came across this Eggplant Rollatini recipe, the only thing the original had soooo much sodium in it.... it was unbelieveable. So I tried to twirk it a little bit and it came out pretty good. A for me! YAYYYYY!!!!!

I love corn cakes, I found this recipe and vamped it up a little bit by adding goat cheese, making it the perfect breakfast food. I'm single so, I can make a batch and wrapped them up for later during the week. Side of turkey bacon or sausage, DELIOUSIOUS! Hope you all like!
Seen this in a magazine and down sized it. It was my first time trying goat cheese.....AWESOME!
