Blueberry/Rhubarb Pie (Serving = 1/8 of pie)

Simple blueberry & rhubarb pie. Can use any kind of berries instead of blueberry. Can use all berries and no rhubarb, as long as you have a total of 4 cups of fruit. The blueberries help offset the tartness of the rhubarb better than other kind of berries.

Smoothie - Kale Smoothie (1 Serving = 1.25 cup)

A smoothie made with kale and assorted fruits and vegetables.

Smoothie - Spinach-Blueberry (Serving 1.25 cup)

Fruit and Vegetable smoothie with yogurt and milk.

Veggie Pizza (Serving = 1/4 of 1 12-inch pizza)

This recipe makes 2 pizzas, 12" diameter. Most of the calories come from the crust and the cheeses, so adjusting the other toppings to fit your tastes should not make a huge difference in the nutritional values. If you are concerned about the high sodium, leaving off the green olives would lower the sodium by quit a bit. Enjoy!
