Beef and Vegetable Chili

I make this recipe for my spouse who loves chili. It is also a great way to add veggies whithout the kids noticing. It is served great on its own, or with baked tortilla chips. Add some shredded cheddar cheese if you like but don't forget to add those calories. This recipe freezes well.

Carrot and Zucchini Stirfry

This vegetable dish is a sidedish at one of my favorite restaurants only theirs are cooked with butter and a lot of it. I make my own version at home to save on the calories.

Chicken Salad Boats

This is a great post workout meal (especially if you don't like protein shakes). I also use this meal for lunches. You can switch things up by replacing the celery with cucumbers. Or adding on stalk of chopped celery right into the chicken salad and eating it on crackers or in a wrap etc.

Baked Parmesian Chicken

You can reduce the fat even more by omiting the margarine and using water instead however the margarine gives the crust a nice texture and colour
