Pozole is typically made with pork and homily, but I found a recipe for a seafood version in a magazine and adapted it to my tastes.
I love ceviche! However, I'm too impatient to let the fish marinade overnight in lime juice, so I concocted this recipe as a quick way to get to the end product. It's probably NOT authentic, but it's SOOOO good!
I LOVE cookies! But I DON'T love the choices they force me to make on my eating plan for the day. I adapted this recipe from a bunch of *other* cookie recipes, finding ways to cut the calories and still try to maintain that irresistible "cookie" taste and texture.
Great for a blustery, cold day..... We use it to top hot dogs, but it's also great by itself in a bowl with diced onion and cheese.
