Low Carb Egg Salad

I eat this for my low carb breakfast many mornings. This and a couple of pieces of bacon. Yum!

Lo Carb Faux Zuppa Toscana

This is a low carb supper soup. Not low fat, purposefully. Fats are allowed on this eating plan. Serving size is about 2 cups. I would have put more cauliflower in the soup if I had more and I would have used chicken broth if I had that. But this was made with what I had. Still turned out really good and very similar to the restaurant version.


I know this would be better with fresh or frozen veggies but I was in a hurry and looking for something to take for lunch and I am on a vegetarian plan temporarily so this is what I created with what was easy to pull together. It turned out pretty good.
Nutritional Info based on serving size of 1 cup.

This is an easy way to add protein with the carbs of the rice. Tasty too!


I cook these all day in the crock pot while I am at work and come home to dinner all made. I usually throw in some potatoes to "bake" along with the bell peppers.
