This yummy chili is a filling but healthy meal choice.
This unsweetened muesli makes a nutritious but slightly sweet breakfast. Add 1/2 cup soy milk to make it a good fast meal without too many calories (if you have time, let the muesli soak in the milk for about 10 minutes).

This creamy cilantro ranch dressing is similar to what is served at Bajio Mexican Grill or Cafe Rio. Values were calculated with 4 T. cilantro, real (full fat) mayonnaise, 1/2 jalapeno, and 1 medium tomatillo.
These are a great freezer meal. I make up 12 thighs at once, but I store 6 in the freezer to thaw and bake on a day I know I'll be busy. These don't taste exactly cheesy, more like they're coated with a nicely flavored breading.
