You can easily multiply this to make for a group. I made this for myself first to ensure it was edible and found it was AMAZING. Next step is serving the family!
This is easily a whole meal. Or you could make 2 portions and serve it to 3, and add some veggies on the side.

Mrs. Valentich says " This is not my original recipe but it's one of those that gets handed around over the bridge table, across the fence or over a 10 o'clock cup of coffee. But it's so delicious. My family loves it. And it's so easy to make." And we love it too! - Beware, this *is* the type to make you lose control, so only make this when you know it is going to get eaten and have no leftovers!

by Tosca Reno - Quinoa, the humble grain revered by ancient Inca peoples, is enjoying a revival. Packed with more protein than any other, this crunchy yellow grain was referred to by the Inca as the "Mother Grain." Quinoa has more calcium than milk and is an excellent source of iron, phosphorus, B vitamins and vitamin E. Tip: Rinse quinoa with hot water, shaking vigorously to remove the bitter taste, before cooking.
This is an amazing soup (especially with lemon juice added at end) that is incredibly versatile. You can add your favorite ingredients! Would be good with some cooked chicken pieces too.
