My family loves it. And it's so easy to make." And we love it too! - Beware, this *is* the type to make you lose control, so only make this when you know it is going to get eaten and have no leftovers!

by Tosca Reno - Quinoa, the humble grain revered by ancient Inca peoples, is enjoying a revival. Packed with more protein than any other, this crunchy yellow grain was referred to by the Inca as the "Mother Grain." Quinoa has more calcium than milk and is an excellent source of iron, phosphorus, B vitamins and vitamin E. Tip: Rinse quinoa with hot water, shaking vigorously to remove the bitter taste, before cooking.
This is an amazing soup (especially with lemon juice added at end) that is incredibly versatile. You can add your favorite ingredients! Would be good with some cooked chicken pieces too.
