My favorite lentil soup! Using a mix of lentils is important: the red and green lentils will cook down completely to thicken the broth, while the French and Beluga lentils will hold their shapes better. The coriander lends a very subtle but fabulous flavor, so try not to skip it. Using onion and garlic powder helps make this a safe option for people who deal with acid reflux or GERD.
Using frozen meatballs makes this a simpler weeknight soup option; we like the Italian turkey meatballs from Trader Joe's .
A tomato free pasta dish that is delicious!
A tasty carrot and grain salad. Excellent as a side dish, or you can double it/add it to some greens and top with protein for an entree!
This is a delicious and hearty soup, perfect for an entree. I also like to add a handful of greens to my bowl (which will generally add less than 15 calories).

This is super easy and if you take the time to really work the oil over the kale you can cut calories by only using 1 tsp oil vs. 1 Tbs like a lot of other recipes call for.
