Apple Pear Butter

I love the fall and I love apple and pear butter. I got this recipe from Whole Foods, I just tweaked it a bit, just by adding lemon juice to keep the fruit from browning. The consistency is like apple sauce. It would go great with pork, chicken with mashed potatoes on the side. I'm using this to put in my yogurt, pancakes, ice cream and oatmeal.

Butternut squash & Apples

I made this before and it was really good, but I need more substance to it, so I decided to stuff my guys with rice and added a little balsamic dressing to give it some flavor.

I found these round little guys at the Farmers Market and first thing I thought was ohhh, what can I stuff them with? This is so simple and looks so elegant, fancy, healthy, easy!! You can use long zucchini if you like, just cut length wise and scoop out the seeds.

Oh and this tasted way better then the pic, I was in a rush to eat so it was a quick picture! They were yummy!!! Pefectly tender and oh so good!!
