Alrighty, another remake of a Healthy Choice Dinner that I enjoy. This one is made with some processed items (the spaghetti sauce and tomatoes) but I did make it with whole wheat pasta. You will need a deep skillet for this recipe. Hope you enjoy!!! (The sodium content is not nearly as high as the recipe states. It adds the sodium from salting the pasta water, which I ommited. Of course, if you use homemade ingredients, it will be less.)
Something I threw together tonight to eat, since we forgot to defrost the fish we were supposed to eat. A variation of something my husband has made before, but I made with ingredients I like. I did not add the water or the seasonings to the nutritional value because they add no or negligible calories.
This was just something I threw together with ingredients I already had on hand. It makes one serving. You can reduce the sodium by either using chicken stock instead, or making your own broth. This is just what I had on hand at the time.

So, I decided to see if I could come up with something with a similar enough taste at home. Didn't quite come out right, but it's still very good.
This is my version of the popular Chinese Dish.
I make this to take to eat at work. It's hearty, which keeps me full for a longer time. I use the full egg, on all of the eggs, but you can make this dish much healthier by only using 2 whole egg and the rest egg whites or use egg substitute, depending on your taste and dietary needs (recipe nutritional value calculated using 2 eggs and 4 egg whites). Onions or other vegetables can be added to taste. Fat values are a little less since you drain the potatoes and mushrooms. Beware sodium content in store bought tortillas. This is also great without the tortillas. Better yet, make your own!
I took a vegetable soup recipe and made some modifications. Everyone in my family loved this. Forgive me if some of the ingredients are off....this is my first recipe to try and add on here. Any changes to the ingredients list are noted in the written directions...I would definitely like any feedback you guys have.
