Carb Free Cloud Bread

This is a gluten-free, carb free bread which has the consistency of a hamburger bun. They are crispy when you first bake them but when you put them in a plastic bag for a few hours in the fridge they get soft.

This recipe is from Eating Well Recipe collection. I changed the recipe by replacing ground beef with ground turkey and reducing the amount of dried thyme. It's a really good comfort food.

Jello Mousse with Greek Yogurt

This dessert is a good satisfying snack. If you use a lot of greek yogurt it's cheaper to make it yourself. I have a Donvier yogurt strainer that I bought on line and you just put a 32 oz. container of plain lowfat or nonfat yogurt in it and put it in the fridge for about 24 hours. This makes about 1 1/2 cups of greek yogurt. Make sure that the yogurt has no gelatin or binders or else it won't drain properly. I use Dannon.
