This is always in my refrigerator. I can have it as a side, or prepare a large salad plate. I usually add meat but have also had it with warmed black-eyed peas, or micro waved red potatoes and warmed meat for a bistro salad.
Great flavor and aroma!
I don't like runny eggs. These are loaded with veggies for fiber and cheese for calcium. You can change spices, add Cananadian bacon, - whatever you like, but be sure to add changes to your version of the recipe. Once cooked,
store, eat off all week. I like to add salsa to them and roll into a flour tortilla
