Greek Salad with Dressing

Nice refreshing side salad. I like to add some olives to mine, but I don't add them until the end and they are not in the calculation. I did not add salt to the recipe because the feta cheese is salty.

I love a grilled cheese but shouldn't have them as often as I would like. These satisfy my cravings when I use them to top a salad or soup. Especially tomato or pea soup.

Vegan Macaroni and Cheese

Who doesn't love mac and cheese? Now you can have it even if you're vegan! If you'd like, swap out the frozen squash for 1.5 cups of cooked fresh squash. This one is also made with chickpea pasta which keeps the carbs a bit lower and increases the protein.

Roasted Tomato and Onion

I added some zucchini here, but you don't have to. Good as a side with dinner or even with eggs for breakfast. Makes 2 large servings.

Makes a yummy meal or snack. Very easy.

Hard Boiled Guacamole Eggs

A quick and easy snack. Adding the guacamole gives a huge flavor boost and cuts out some of the cholesterol. I used prepared guacamole but you can make your own.

So yummy and versatile. Change up any of the ingredients to your taste. Prefer ham to provolone? No problem. Prefer cheddar to swiss? Make the change. This goes real fast in my house and is a nice side to a lot of meals. Enjoy!

It doesn't get much healthier than this. Wanted a soup using cruciferous veggies and came up with this. Serve with a healthy sandwich to get a well rounded meal.

Yummy, easy and low fat. Add your fave dressing and a nice crunchy bread. Great for lunch or dinner.

My son started making this years ago when he had to make up a recipe for third grade. That was 1991/1992. This is still one of our absolute favorites. So adaptable to changes. Add or delete veggies as desired, or add ham or pepperoni.

Beef Roast Supreme

Delicious! Can also be cooked in a slow cooker. This recipe makes its own gravy. Once in the oven, don't peek. It has the best aroma when done.

Sweet and Sour Meatballs, 3 meatballs

Only 3 ingredients and super easy. Serve over rice or as an appetizer.

Ali's "Kind of" Gumbo

Easy to make and tasty. Needed to use up bits and pieces of things in the fridge. Very tasty. Didn't think to use file. Would have been great with some seafood if you have it.

Tuna Salad by Ali

My reduced calorie version. I love it open face on lightly toasted bread with a slice of tomato. Top with a slice of your favorite cheese and broil until the cheese melts. Also good on top of a tossed salad.

Easy tasty dish. Serve with a side of rice and a salad.

Ali's Amazing Pasta

I was having "one of those days" and needed a quick dinner. I threw this together, and liked it so much, had to write down the recipe to make again. Even DH, who was not sure about it, loved it. Lots of veggies and easy to substitute what you have on hand. Great with a side salad and some bread. Enjoy!

Super Easy Vegetable Soup

So easy and tasty. High in fiber. Freezes well. I use mixed veggies that have lima beans in them. I will also add any leftover veggies that I have.

Chili with Lentils

A great tasting chili made with lentils instead of meat. Low calorie and packed with fiber. Add more or less seasonings to taste. Also good with some chocolate added.

Cool Veggie Salad

Cool and refreshing. Try it with a spicy dish as a nice change.
