Trying to boost potassium? Try this soup.
Easy breakfast bowl. This is calculated to serve 2. For a larger appetite, add a hard boiled egg, a piece for French toast or an English Muffin.

Who doesn't love mac and cheese? Now you can have it even if you're vegan! If you'd like, swap out the frozen squash for 1.5 cups of cooked fresh squash. This one is also made with chickpea pasta which keeps the carbs a bit lower and increases the protein.

So easy and tasty. High in fiber. Freezes well. I use mixed veggies that have lima beans in them. I will also add any leftover veggies that I have.
A great tasting chili made with lentils instead of meat. Low calorie and packed with fiber. Add more or less seasonings to taste. Also good with some chocolate added.
Cool and refreshing. Try it with a spicy dish as a nice change.
