Brittnie's Vegan Beef Broth

This beef broth substitute works great as a soup base, in recipes calling for beef broth, or as a marinade for tofu, portobellos, or tempeh!

Super Tasty Vegan Banana Chocolate Chip Cookies

These are really freaking good. Calculated here for calorie-tracking purposes. Modified from the cookie recipe here:

Brittnie's Vegan Chocolate Chip Cookies

Tasty little vegan cookies! These use Stevia as a sugar replacement, but the chocolate chips are NOT low sugar or sugar free. I do the replacement to lower the calories a little bit.

Brittnie's Vegan Stovetop Quinoa Chili

This scrumptious chili is sure to please even the carnivores in your life!

I have to give props to the Savvy Vegetarians for their original recipe:

Brittnie's Vegan Chocolate Chip Cinnamon Bread

This is a modified version of Natural Papa's recipe for cinnamon raisin bread.

The original recipe can be found here:

Brittnie's Vegan Chickpea Salad

I made this for lunch as a "what's in the pantry?" adventure. It came out so delicious that I had to share it!

Brittnie's Easy Vegan Wasabi Miso Mayo

This tasty vegan mayo goes great with Asian-inspired salads! You won't miss the eggs, or the calories!

This pie is easy to prepare and even easier to eat! One serving packs a ton of protein and healthy unsaturated fats, while sparing you too much sugar. Enjoy!

Brittnie's Vegan Peanut Butter Cookies

I modified Chocolate-Covered Katie's recipe to use ingredients that I had at home, including lower sugar options.

Thanks, Katie! Here is her original recipe:

Brittnie's Southwest Sauce

This sauce is delicious, and it could easily be made vegan by swapping out agave for the honey. Quick and RIDICULOUSLY easy!

Brittnie's Vegan Tofu and Chickpeas

Enjoy this kosher pareve vegan dish on any occasion. It is perfect for dinner or Rosh Hashanah! Even your meat-eating friends will love it.

Brittnie's Whole Wheat Chocolate Banana Bread (Low in everything but taste!)

This delicious bread is low in fat and sodium, and is lower in sugar than most banana breads.... and it even has fiber! You might be surprised to find out that it actually tastes great!

Brittnie's Vegetarian Cheese Quesadillas

Tasty, low calorie quesadillas! High in fiber, protein and taste.

*Add peppers, broccoli, or another vegetable to amp up the health value. You can "healthy sautee" most vegetables in with the Quorn tenders and water (see below).

*I use Kraft's Fat Free Shredded Mozzarella and Cheddar cheeses because they are the only fat free shredded cheeses at my grocery store.

*Due to the limited nutrition information on these brands' nutrition labels, the recipe has more potassium and other wonderful nutrients than are calculated.*

Brittnie's Almond Pesto

This delicious, thick pesto recipe uses almonds instead of pine nuts to add a tasty twist. Works great as a veggie dip, pasta sauce, or marinade for meat and fish!
