These delicate cookies almost melt in your mouth! Best served soon after baking (amazing when still a bit warm), but will keep in an airtight container. Their texture is a bit chewy, like a coconut cookie. Low Carb has never tasted so good!

This is an adaptation of another delicious recipe. I subbed the brown sugar blend for turbinado sugar, and use butter instead of Benecol spread. I also increased the cinnamon from 1 tsp to 2.

|Chicken - the original white meat
Chicken is my 'go to' protein for the family. If it's dry my daughter won't eat it, so most of my chicken options are pretty saucy!
My son would eat shellfish 7 days a week if I let him! Healthy, sure, but also expensive when you're feeding a family! I try to fit in some kind of seafood at least once a week, just to keep him happy!
