Making a Frittata is not an exact science. It is very forgiving and you can switch out ingredients and substitute to your liking (I'm throwing spinach in my next one!). By using half egg whites in this, the fat and calories is reduced significantly. This recipe is adapted from an omelet recipe I found in my Jamie Oliver cookbook. I got rave reviews from my family and my husband wanted the whole thing to himself :) And it looks gorgeous when it comes out - I wish I would've gotten a photo!
