Recipes I've Shared:

Faith's crunchy granola

This is a combination of many granola recipes and it can be modified to suit individual taste preference. I find this one a little too sweet, so will reduce the amount of brown sugar next time I make it.

Joanne's balsamic vinaigrette

This is a great basic recipe that can be adapted in many ways.

Homemade Granola Bars

Recipe comes from the Barefoot Contessa's back to basics.

Chocolate peanut rice krispie squares

Quick, easy to make squares that keep for ages. Can be frozen with no deterioration in quality. This, along with some fruit, is a great snack for kids after school.

Faith's refrigerator vegetable soup

This is a great way to clean out your refrigerator with those small amounts of food that need to be used up. Simple, quick, easy, and delicious. Add or delete any veggies you have or like to include.

Celery Soup

A thick, creamy, smooth soup with no dairy and a bright taste.

Raspberry Bran Muffins

Got this recipe from Anna Olson on Food Network Canada. As I did not have blueberries on hand, I used frozen raspberries instead and it turned out really well. The original recipe called for white sugar, but I substituted brown. Next time I will use some whole wheat flour instead of all white. Another substitution could be applesauce instead of the oil.

Washington Cookies

This is an oatmeal/chocolate chip cookie recipe that I have adapted to be diabetic friendly. I substituted Splenda and Brown Splenda for the sugars. One could also sue carob chips instead of chocolate chips, but I didn't have any on hand. 2 cookies count for about 100 calories and 15 g of carbs.

Beef Stroganoff Russian style

A delicious version of the old favourite. Could be lightened up and made healthier by using flank steak, olive oil, and light sour cream.

Quick Butter Chicken

Easy, quick, delicious
