Chocolate Pumpkin Cake, Take 2

You can use canned pumpkin with just about any cake mix. Usually you add some water, too. This is a new thing. I forgot that I had used evaporated milk and used the fat free sweetened condensed milk this time by accident. It turned out okay. Kids loved it. Not quite as low calorie as the other version, tho.

Crazy Eggs

This is a great meal to bake for things like holiday breakfast. I prefer it without breakfast meat, but you can add cubed ham, fried bacon, or sausage if you like. It is best if prepared at least 1 night before you bake (two is even better).

Andy's Chocolate Chip Pancakes

This is my favorite pancake. Substituting egg beaters and skim milk help to reduce calorie content a little. The chocolate chips are sprinkled onto the top of each pancake once it is poured, so 8 tbsp is an approximation.

Lisa's Breakfast Burrito

Scramble eggs, melt cheese, roll into heated tortilla w/salsa

Lower Fat Banana AppleSauce Chocolate Chip Bread

This is adapted from another member's recipe by using splenda instead of sugar and egg beaters instead of eggs. Also original used cake flour in place of the flours here; this gives more fiber. Compared, however, by serving size it's not very different for total calorie count.

Toni's Juicy Meatloaf

This is my mother-in-law's meatloaf, adapted to 2 pounds of beef. It isn't really low in fat, other than the 90% lean sirloin here. You can use lower sodium options. I have also used ketchup, and varied the amounts of garlic and other seasonings.
