Comforting chicken and mushroom casserole with homemade cream of mushroom soup. Lower in sodium than canned soup and no MSG!
Why use canned soup full of preservatives and MSG? Learning to make a white sauce is a basic cooking skill and it can be flavored many different ways. This recipe equals approximately one 10oz can of undiluted cream of mushroom soup. The whole wheat flour gives it a nutty taste, but you can use white if you prefer.

There are several versions of this recipe out there, but none quite like mine. You can reduce the calories and fat by using less cheese. You can also add whatever vegetables you like. I usually saute them lightly before adding to the casserole otherwise it can be too runny.
Creamy variation on traditional salsa chicken. If sodium is an issue for you, you can try substituting other seasonings to taste for the taco seasoning mix.
