Beer Can Chicken

I love the way the beer makes the chicken very moist. (Alcohol evaporates while cooking). I season the chicken ahead of time so that the rub can soak into the chicken.

Chicken and Rice Soup

This recipe is a no salt added soup. If you want to add salt by all means do but I prefer to add mines to my bowl. Sometimes I squeeze some juice from a lemon to make it a little more tasty.


My favorite for a go to snack. Spread it on a pita with crumbled feta cheese. Yummy. I use the juice of a whole lemon to give it that extra little tart taste.

Banana Nut Bread

I made this for desert to eat with a 1/4 cup of greek yogurt to give me the feeling of eating something I shouldn't be eating. Great for breakfast with cereal, milk, and fruits also. With the splenda I used 1 cup but it wouldn't come up as that.

Vegetable Soup

I eat this soup with either salad, a chicken salad or other type of sandwich on pita. Very low fat and very filling. Can be eating for lunch or dinner or just as an afternoon snack.

Garden Herb Meatloaf

Ground Turkey, 1 unit, yield from 1 lb raw (remove)
Carrots, raw, 1 cup, chopped (remove)
Onions, raw, 1 medium (2-1/2" dia) (remove)
Parsley, 1 cup (remove)
Oregano, ground, 1 tbsp (remove)
Basil, 5 leaves (remove)
*Colgin Liquid Smoke, 2 tsp (remove)
*worchestire sauce, 2 serving (remove)
Mrs. Dash (R) Garlic & Herb Seasoning Blend, 1 tsp (remove)
*Nature's Seasons Seasoning Blend, 2 serving (remove)
*MORTON Sea Salt, Fine Salt, 1 tsp (remove)
Pepper, black, 1 tbsp (remove)

Green Mango Pineapple Banana Smoothie

This is a healthy green smoothie. Don't let the spinach in the recipe fool you it is very good and you can't even tast the vegie. Enjoy. I drink this for breakfast when I'm in a hurry in the am's

Sauteed peppers and onions

A wonderful low carb side for brown rice and/or chicken. Or great as a topper on any meat.

Curry Chicken

Chicken Breast, no skin, 3 breast, bone and skin removed (sliced)
Curry powder, 3 tbsp
*coriander powder, 1 serving
Pepper, black, 2 tbsp
Salt, 1 tbsp
*Vegetable boullion - 1 cube, .5 serving
Onions, raw, 2 large (diced)
*All Natural Vegetable Oil Cooking Spray, 3 serving
Olive Oil, 1 tbsp


Arroz con pollo is a typical puerto rican dish. I adjusted by adding the beans to the same dish to make it a one pot mea. Worth it's wait.


This is a quick 15 minute recipe that taste great (and spicy).
