Cauliflower and Kale Bake: SouthBeach

Cauliflower and kale combine in an egg-less casserole-style dish. A cheesy tofu topping adds enough protein to make this a meal. Can easily double recipe for a 9x13 pan.

Vegetable Tofu Bake

An interesting cheesy baked dish loaded with spinach and flavored with sun-dried tomatoes.

Spinach Lasagna

A yummy twist to a favorite classic. Can cut down on the cheese a bit to lighten the calories.

Caribbean Black-Eyed Pea Salad (Accidental Vegan)

The hot sauce adds a little zing to this traditional Caribbean dish. Easy to make.

Whole-Wheat Spaghetti with Golden Garlic, Tomatoes, and Sage/Vegetarian Times

Sage and tomatoes pair beautifully in this light pasta sauce. Firm Roma tomatoes are your best bet here for a sauce that’s not too watery. If early-season tomatoes make the sauce taste too acidic, stir 1 tsp. sugar or honey in with the sage and olives.

Zucchini-Tomato Gratin: Vegetarian Times

For a light entrée on a summer night, this dish is just the ticket. Salting and draining the zucchini and tomatoes before baking prevents them from releasing excess moisture as they bake, so the gratin stays firm, not soggy.

Kitchari with Cauliflower & Peas

An easy Indian inspired dish and a great way to use cauliflower.

Broccoli Dahl

A mild Indian-spiced soup with all the comforts of creamy broccoli soup.
From "Vegan Yum Tum", Lauren Ulm
