I found the recipe in a magazine but cut back on the oil and added extra tomato, onion & garlic.
Living in Costa Rica, we have some of the BEST mangoes. 2 large mangoes, soy milk and ice and you have a really delicious and nutritious breakfast.
You can save some calories by omitted the walnuts. But who can have banana bread without walnuts??

Found this recipe on Epicurious. I cut back a bit on the fat (less oil and butter), switched leeks with an onion and used FF plain yogurt instead of sour cream. Also used almonds instead of pecans.
It is a hearty dish and you can reduce more calories by eating a smaller portion, but it was very tasty and worth it!!
Found this basic recipe on line and made just few tweaks. For my husband that doesn't really like squash, he added some grated parm and called it a keeper!!

I tweaked a few things. .didn't have fresh parsley so I had to use dried, I also added more garlic and used a little less oil. Overall, it was a hit.
Courtesy of Cat Cora and Epicurious. I tweaked a few things (left out celery, more cucumber and onion, no yellow pepper . ..didn't have any) but it was really very good. Made it and let chill in the fridge for a day or two. Even better!!
So good, my husband and I ate it all even though it really would be 4 appetizer sized servings.

I found the original recipe on Allrecipes.com (courtesy of DIGGETYDOG) but I made some tweaks. Eliminated a few things. . .add more of others. According to my husband, a real keeper. I served it over seasoned mashed cauliflower. It worked great together

Original recipe called for 1 stick of celery, but I don't like it so I omitted it. Also called for 1/4 cup fresh parsley which I didn't have.
I also ended up cooking it a bit longer as I wanted the cauliflower and potatoes to be soft before I blended them.

I found this on line and tweaked it a little as I made less than the recipe called for. But I did keep the same amount of onion and garlic. I also used jarred ginger and asian hot sauce (slight variations on the original).
Make it as HOT as you want it to be!!

This goes with the Chipotle Marinated Pork I posted separately. I found the recipe on Cooking Light. You can have less calories by having less. But it really did taste good so we piled it on. 4 servings seemed just right over pork and rice

I believe I found this on Cooking Light. You can use chicken thighs or breasts and add as much "heat" as you can stand.

Once again . . .from CookingLight. I omitted the oil and used PAM instead to saute the onions. . cut down on the calories and fat. I also winged it on the seasonings. Also added some garlic when it was done. My husband says a keeper.

Use low sodium chicken broth to reduce the sodium count. You can make it non-alcoholic by substituting 1-2 tablespoons balsamic vinegar and 2 tablespoons additional broth for the wine.
You can make the "kick" as hot as you want by adding more spices.
This is a mish mosh of various salsa recipes I have tried in the past. Add any addition spices you might like.

From CookingLight. I used less chicken, broth and wine, deleted the oil all together but used the same amount of spices. Very tasty. Served over rice with homemade low cal raita. A delicious dinner
Perfect pork chops EVERY time!! Play around with the amount of each spice. Whatever works for you.
I think I found this on Cooking Light. I tweaked it a bit . . . switched pine nuts for sliced almonds, more garlic . . . The chicken itself was AMAZING. The onions and peppers were great over rice with it.

I found this at www.justchickenrecipes.com and had to tweak it a bit based on what I had on hand (and the fact that I like a bit more spice). It also called for "skinned" chicken thighs but I had skinless so it didn't come out quite as carmelized or glazed as I would have thought. But with that said. . .it is a keeper

The original recipe on Cooking Light called for Hoisin sauce and lime juice (neither of which I had) so I made some substitutions and added LOTS more garlic and ginger.
The name says it all. I found this on Cooking Light. Made some extra sauce and served it over rice. DELISH! (the orig. recipe called for chix thighs but I used breasts instead)

I got this from Cooking Light (March 1998). I cannot tell you how good this is. Add hot sauce to taste and you can experiment with more or less of a particular fruit.
A great way to get your fruits and veggies all in one meal.
