This was an experiment that worked out really well. Probably one of the best dishes I've ever made up. It is also a really good way to make use of leftover chicken. You could easily make it spicier if you like a little heat. I'm kind of a wimp.
I made this in the crock pot. A serving is about 1 1/2 cups. Also, I guessed on the spices - use them to taste. Also, I didn't measure the water and just covered the vegetables with it - it was probably a bit less than 4 cups. I went heavy on the cumin and it's warm, but not hot.

This is a variation on one of my favorite dinners and is so simple it seem silly to write a recipe! Takes about 10 minutes to make, tastes great, low calorie and doesn't wear off too quickly.
