Sangria - green smoothie

This makes 2 servings of delicious and healthy green smoothie

European style fruit cake base

This base works well for fruit cakes, European style. Similar to an angel cake or Victoria sponge cake I think. I topped it with fresh strawberries and agar-agar but any fruit would work well. You might even put a thin layer of custard or vegan pudding onto the cake base and then top it with the fruit. Extra yummy and the fruit juice won't soak the base.

Vegan cauliflower mashed potatoes (caulipots)

Great way to reduce calorie and increase protein intake. Use this to accompany your "meat" and 2 veg or for topping Sheperd's pie etc.

Upside-down lentil sheperd's pie

Slightly altered version of this recipe from Isa Chandra Moskowitz's recipe book APPETITE FOR REDUCTION. Namely, switch zucchine for green peppers and changed some of the vegetable weights to what I had at home. As such, overall, the nutritional information is only marginally different to that stated in the book.

Vegan peanut butter waffles

Vegan Peanut Butter Waffles from "Vegan Brunch". I used golden syrup in place of maple syrup. Spray oil for waffle iron is not included in recipe calculator.

Vegan Chocolate Brownies

This is not a diet food but a treat that can be enjoyed occasionally. Add 1 cup of coarsely chopped pecans or walnuts if you want to add essential fatty acids and are not watching fat contents. Can be kept in the fridge for up to 5 days or freezer for up to 3 months

Avocado, cucumber and tomato salad

Makes 1 main meal serving or 2-3 appetizers

Radish salad

It's best to let this salad infuse in the fridge for a while but you can also eat straight away.

Linwoods super porridge

This can also be made without the Linwoods fruit and seed mix, but protein & iron values will be significantly different. Makes a single serving

Courgette/Zucchini hummus

Makes over 3 cups, so you can cut the recipe in half or even quarter.

You can omit the sesame seeds entirely, but in that case you might also like to omit the olive oil so that the conistency doesn't become too thin.

Vegan borlotti beans salad

I made this salad this morning for taking to work and liked it. It's probably possible to leave out the Omega oil but I added it to gain the benefits.

Miso soup with noodles, veg and vegan 'chicken'

Nice light soup with a bite - you can put add additional veggies or swap the 'chicken' with tofu. Marinated tofu pieces work particularly well.

Orange juice with a kick

This vitamin C rich fresh juice makes a great refreshing and energising drink for breakfast (or snack).
