Okonomi stands for "what you wish" so use this recipe as base and throw in whatever you can get your hands on! Substitute vegetables/ meat or even flour if you can't find the Showa brand!
Makes 4 small pancakes or 3 large.
Simple, quick, healthy and undeniably yummy! What's better? If you shred the carrots and zucchini up the kids probably won't even know they're there! Add mince if you need the protein.
Serve on a bed of couscous! I find this dish is great for using up those leftover veges! Just don't forget to add the calories in!
Sometimes a rainy family day calls for an old-fashioned brunch of pancakes. Serve with berry compote or maple syrup and bacon.
