I've been experimenting with the egg mugs for a few months now. I used to LOVE to eat the english muffins with cheese and regular poached eggs until the doc told me to cut out the yolks. This is a lower fat, lower cholesterol, lower calorie alternative. You can stubstitute other lean meats and come up with a satisfying breakfast sandwich.
This is a thin and healthier pizza that I find quite satisfying. For changes in variation, you can use the "lite multigrain english muffins" split in two, or any of the flat breads that are now popular. You can also substitute soy cheese to change up the fat content. I sometimes will add sliced cherry tomato, carmelized onions.
This is quick and very easy recipe to make. it takes a bit of attention and time so it won't scortch. Make sure to bring up the heat slowly to melt the cheese. My picky eater daughter loves this.

er of servings "guessed" at 5 since the package of tofu says 5 servings. Probably about 3-4 slices per serving. NOTE: I changed the soy to low sodium soy sauce. Much of the liquid will drain away, so the sodium numbers in reality are probably lower.
