Once the arepas have been cooked, the possibilities are endless. They are split open and filled with whatever you want . One is Reina Pepiada, chicken and avocado. The Domino, salty white cheese ,black beans and fried plantains. The Perico is served with scrambled eggs,chopped tomato and onion. I showed a photo served with Guasacaca, avocado and tiny shrimp, garlic ,jalapeno pepper ,onion, and shredded cheese.

Pears poached in a orange, spice syrup,with candied orange peel and drizzled with chocolate sauce.
Small pasta shells, tossed with shrimp, mushrooms, asparagus in a tomato, basil sauce.

This Louisiana recepie combines green cabbage,beef,peppers, cream, and sharp cheddar cheese. he utilizes rice to soak up the excess liquid. This dish could easily be the star of the table, served with a salad. Or as a side with pork chops and vegetables, as it is served in the restaurant.
Orzo pasta salad with roasted vegetables. Can add different veggies, like zucchini, or fennel. Different squashes.
Be sure and roast them. Can use different herbs too.
Sometimes flavored pepper olive oil for the plain.
With shrimp or chicken added it's a lovely meal.

This refreshing summer salad can sit in the refrigerator for a day. The leftovers will be good for a couple of days.
