A variation on the popular sugar cookie, this recipe comes from the kitchen of my husband's sister. Yummy!

My husband, who's diabetic, loves coconut macaroons. Imagine his delight when we found this recipe made with a sugar substitute.
Taken from the cookbook, A Taste of Oregon, this has become a family favorite. I do reduce the amount of potatoes, carrots and corn to keep carbs lower but follow the recipe otherwise.
Taken from the packaging, this is a tasty slaw that I use all the time. I have made substitutions by using lowfat mayonnaise and Splenda instead of sugar.
