Can easily add any other vegetebles. I prefer whole wheat couscous, the nutrition facts are for plain couscous.
Vegetarian, could easily have meat or more vegetables subbed in. I usually find the "fire roasted" crushed tomatoes in the ethnic section of the grocery.
This also freezes well, as a busy college student, I can't really cook most days. I bake this ahead of time, portion it into Tupperware and have a delicious home-cooked meal on the go.
I like to make food ahead of time, so I can just pick and choose from my freezer when I'm in a time crunch. You can add any additional vegetables or meat you like.
I like to make this and refrigerate for a few days for fuller flavor. You can also use garbanzo beans in place of the navy beans, and add/remove spices to taste.
Keep in airtight container + serve with vegetables or pita chips.
Something my mom used to make me, you can sub in different vegetables, leave out the cheese, or change the type of pasta to suit your needs.
