I developed this lower fat version of my favourite moist lemon polenta cake which uses fat free yogurt instead of butter! Less than 200 cals and 1g of saturated fat per generous slice. It is also naturally gluten free.
A simple and tasty dish that looks pretty enough for a dinner party.
The three forms of red pepper are: fresh, smoked paprika and hot pepper. You could omit the hot pepper and use hot paprika instead.
Serve with pasta, rice, or oven warmed bread and a green salad.
A moist dessert cake - a reasonably low fat way to indulge cravings for something sweet. My nutritional analysis is based on using fruit sugar (or granulated fructose). This saves calories because you use 1/3 less than ordinary sugar. However, granulated sugar can be used, - just add little more.
This is a complete meal that is high in flavour and surprisingly low in fat. If you are a fan of generous portions of spicy food, give it a try.
I only used 1/2 a stock cube, so the sodium level should be lower.

I'm looking for a wide repertoire of healthy recipes so that eventually I won't have to count the calories in every meal - I'll know that I'm staying within sensible limits for calories and fats.
