This is almost the way my mother made them. I use fresh bread crumbs, no cheese, a little less oil. I've had this in restaurants where they add chopped pine nuts and/or capers and lots more garlic, but I think it's better like this. These are expensive and take some effort so they were reserved for holidays when I was a kid. I guess this is truely an old family recipe.
These are very easy, very nice. You must like mushrooms to like this. This is a two bite appitizer with very low calories. Each one has less than 20 calories. It makes it easier to pass up the greasy, cheesy, flakey things passed around at parties.

Chicken with vegetables in gravy. My family loves this in a pie crust. (I usually make this with leftover chicken from a roasted chicken)

My daughter's a vegan. I like having this soup around for her if I make a meal she can't eat. I also take it for lunch myself often.
about an hour from start to finish, with enough simmering time to make a side salad or corn bread muffins, clean up the prep dishes, and set the table. The cooking time is flexible - it's ready when you are (within reason). Great left over. Poblano peppers have a tiny bit of heat to them. You can sub bell or chili peppers if you'd like.
good on sandwiches
I like to eat this over a bed of lettuce with cucumber and tomatoes on the side. Or in a sandwich.
2 cans tuna, 12 oz no yolk egg noodles, 1 can soup, 1 can 2% milk.

This is from Rachael Ray's stuff, but changed to Turkey and a few other changes. It's easy, fast, low fat. The leftovers make a nice lunch if you have a microwave where you eat lundh.
Just a plain omelet.
