Easy and portable breakfast muffins
I was looking for a way to spruce up tuna salad that included less fat. This is what I came up with. You can also substitute other vinegar if you don't like balsamic.
I like to make these for breakfast as they are really filling. I usually make 6 blueberry and 6 raisin ones. These are really high in fiber at about 6 grams.
This meal is both Vegan and Dairy free chili.
If you want to modify this - try adding some cooked ground turkey or beef or some fat free sour cream or cheese. These are not added in to the calorie total, but make delicious modifications. A lot of times I will have these on the side for those who want them. Also, experiment with the spices. I have had great success using different spices in this recipe and it still turns out delicious.
These are really yummy and pretty cheap to make.
