This is a drastically different (healthy) variation of my most requested recipe! Made no-added-fat and vegan!
Read the description online on the menu at Carlos Santana's restaurant! Sounded yummy so i made it!

Serve before your favorite mexican dinner! If you are not watching your calories, add baked tortilla chips and maybe some sliced avocado!
Great to serve before a pasta dinner. Leave out the tomatoes if you are using a red sauce, if desired.

Takes some time to prep but worth the effort! Add spices and vary vegetables to suit your tastes. I added no-chik seasoning to sauce, endless possibilities!
