Reduced Calorie and Sodium Gypsy Soup

My changes to the Gypsy soup recipe found in Mollie Katzen's Moosewood Cookbook to reduce fat, calories and sodium. If you leave out the soy sauce all together (I think it tastes fine) it is amazingly low in sodium!!

Revised Peanut and Sesame Noodles

Took Chef Meg's recipe but doubled the pasta for the amount of sauce, used Simply Jif and low sodium soy sauce and doubled the serving size.

Authentic Indian Chicken Curry (Recalculated and slightly changed)

Recipe listed here previously with recalculated calorie counts and a few minor changes. I used 1 1/2 pounds chicken rather than 2 pounds; I used one can diced tomatoes rather than fresh; I reduced cayanne pepper to 1/2 tsp. and I omitted curry leaves which are not readily available in my area. I also added 1/2 cup water to thin the sauce so the chicken could cook better for a longer period of time.

Strawberry Banana yogurt popscicles

A very versatile recipe. Use your favorite fruits and alter sweetener as desired (adjust calorie and nutrition information accordingly). Only takes a few minutes to make plus freezing time.
