Cumin is the secret ingredient here to add an exotic touch. Carrots are available preshredded at many groceries, so this goes together very quickly. I adapted a recipe from Ina Garten, subbing in light sour cream and mayo and cutting the quantity, and cutting the sugar by 2 thirds.
Most recipes for egg salad make up enough for 5 or 6 sandwiches. This is a recipe for a small household. I added pimento pepper to add color, flavor and a bit more nutrition.
