Made with coconut milk, so vegan.
uses mock chicken, but you can substitute real chicken or tofu if that's easier.
these are wheat free, and are my favourite after workout breakfast. Lots of good carbs and protein. To add even more protein, I top mine with a couple tablespoons of vanilla yogourt, and then drizzle a teaspoon of maple syrup on that. I never thought I could pancakes without butter until today.
This was tweaked from the tofu kale loaf recipe.

I find I'm just barely reaching the desired protein range. I thought there might be other vegetarians out there having the same problem.
