My grandmother's stuffed cabbage, veganized. Nutritional info is for a single roll. I made this for my omnivorous friends at Rosh Hashana and it was a big hit.

Bell peppers stuffed with quinoa, sauteed onions, and tomato sauce, then baked.


Lebanese lentils. Yes, traditionally made with bulghur (or rice), I swapped quinoa because I'm on a quinoa kick. Also to up the protein quotient.
