Whole Wheat Pancakes, Semi-scratch

Log Cabin's new All Natural Pancake mix has some whole wheat flour, but I wanted to increase the fibver and whole grains, so I expreimented with using a half cup of the mix and a half cup whole wheat flour, instead of 1 cup of the mix. It worked great and tasted wonderful.

Miso Vegetable Soup with Noodles

A nice single-serving veggie miso soup with angel hair pasta to make it a little more filling than plain miso soup.

Improved Tater Tot Casserole

A more-nutritious version, this recipe has less sodium and less fat per serving than the "standard" version using canned cream soup.

Baked Beef Stew

Handwritten on a card by my mother, this recipe is a family classic, which I've jazzed up with extra vegetables, thyme and black pepper. I often make it in a crockpot, but it has the same luscious flavor as in the oven. The combination of tomato juice and tapioca makes its own gravy as the stew cooks.

Mom's Mazola Sugar Cookies

My mom got this recipe from the back of a Mazola bottle sometime in the 50's. This is exactly how it's typed on her recipe card. It's my favorite sugar cookie.

Three Sisters Skillet

A skillet saute of corn, beans, and squash. I served it with baked salmon and a white-and-wild rice mixture. It can be vegetarian if one omits the pat of butter.
