A delicious creamy and flavorful coconut milk curry. I made some changes to the original recipe...used part lite and part normal coconut milk, chicken instead of shrimp (says you can use in recipe), thin rice noodles instead of pad thai noodles, added bell pepper, freeze dried lemongrass instead of fresh, ginger and garlic purees from tubes instead of fresh and increased amounts of these (used Gourmet Garden Brand). I also used reduced sodium soy sauce instead of regular and increased the amount of red curry paste, ginger, lemongrass, and garlic (because I used processed versions and thought it needed it to balance the heavier coconut milk). The nutrition calculation is from these modifications. Original ingredients before substitutions are noted in parentheses.

Cranberry sauce with a bit of subtle curry spice provides great flavor to this healthy chicken recipe.The unexpected combination is delicious. I enjoyed this recipe for years as a kid. Includes fresh and dried fruit.
From Cooks.com. Creamy, filling soup. I doubled the recipe for the calorie calculation. The original recipe is below. I also only used 2 tbsp of bourbin for the entire doubled recipe and it still turned out fine.
Quick and easy to make, but not from a mix (made from scratch). Nicely compliments chili or other Mexican flavors.
Cioppino is that great Italian dish that seems so daunting to make. Not this recipe! I can now make a huge batch of it at home to last for many nights. The quality of the seafood is not as good as using fresh seafood, but frozen is much easier and more economical for an everyday dish.
